Fresh Berries with Sabayon By Chef Dennis Jones
This is a dish I like to prepare in the summer when we have a wide variety of fresh fruits & berries to choose from that are grown in the state of Michigan.
It's very simple to make!
Enjoy!
Start off with:
- 6 Egg Yolks
- 1/2 Cup Sugar
- 1/2 Cup Sweet Marsala Wine
- Water as needed
- 4 Cups Mixed Berries (such as Strawberries, Raspberries, Blueberries, Blackberries, Boysenberries )
- 2 Tablespoons Butter
- 1/4 cup sugar
- Mint leaves for garnish
You will also need a pot with slow boiling water a glass or metal bowl that will fit over the pot and a whisk
To Start:
- In the bowl, whisk together the egg yolks and the sugar until light and fluffy
- Add the wine and whip over the pot of water until nice and thick ( if it gets too thick thin out with some water) the sauce should coat the back of a spoon.
- In a sauté pan melt the butter with the sugar and toss in the berries until warm
- Pour the berries into a bowl, top with the warm Sabayon and garnish with the mint
Chef Tip: For that real gourmet look with a small butane torch slightly caramelize the top of the Sabayon
